Hello there! Today I'm posting a couple of recipes that we tried last night.  I don't know about you, but it's that time of the summer when we're in need of a few different recipes from the usual summer BBQ fare. Last week I was on Pinterest I saw a recipe for BBQ'ing Corned Beef from Palmabella's Passions. Honestly, I thought it sounded a little odd, but I did have a Corned Beef in the freezer, so why not? I'd also pinned a recipe from Delectameals for hash browns cooked in muffin tins. (I thought the hash brown cups might sweeten the deal for the kids, who inevitably turn up their cute little noses at Corned Beef).

I'm so glad we tried these recipes, and will definitely make them again. Thank you to Julia and Palma for sharing their recipes!

BBQ Corned Beef

The Corned Beef came out delicious.  If you like corned beef, this will make a nice change. I had a pre-packaged corned beef in the freezer, so after defrosting it, I popped it in the crock-pot (as per the package directions), and added the spice pack.
 
Off we went for the day.
 
When we returned we drained the corned beef, covered it in BBQ Sauce (Sweet Baby Rays) and wrapped it in foil.
 
Popped it on the pre-heated medium grill for 1/2 hour.
 
*Note: use quite a bit of BBQ sauce, and only put it on the grill for 1/2 hour - any longer and the BBQ sauce will dry out a little too much. What? NO! I did not leave the corned beef on the grill too long because I was on the phone - I just think that might happen... to someone else.
 
Slice and enjoy!
 
By the way, if you need a grill, this has tons of great reviews, all saying it is the best grill for the money,
and doesn't take up a lot of space on patios, etc... Thought I'd let you know, because I've been looking into this grill!
 

 
To serve along with the BBQ Corned Beef I made these cute Hash Brown Cups. I followed the recipe from Delectameals, however, I added 2 eggs to the mixture. 
 
 
 Hash Brown Cups
 
 
Mix one bag of frozen (20 oz) bag of hash browns with 2 eggs, 1/2 cup Parmesan cheese and 1 tsp dried dill.
 
Spray a muffin tin with cooking spray, and fill each cup with the potato mixture and pack down lightly.
 
Bake at 350 for 45 mins to 1 hour until browned and crispy.
 

All in all, a nice change for a summer night. I'm going to try adding sharp cheddar to the potatoes next time. And, while I'm thinking about it, I may have to add a splash of cream, and some fresh minced garlic too.

(You really can't argue with these recipes, which requires so little work!
Especially if your lazy pressed for time, like me.)
